Slow Cooker Peach & Blackberry Cobbler
Ingredients
- 1 pound peaches, sliced
- 6 ounces fresh blackberries
- 5 tablespoons sugar
- 1 tablespoon flour
- 1 1/2 teaspoons lemon juice
- 1 teaspoon almond extract
- 3/4 cup flour
- 3/4 teaspon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 5 teaspoons sugar, divided
- 1 teaspoon cinnamon
- 2 tablespoons butter
- 1/2 cup buttermilk
Directions
- 1Spray the inside of a 3-quart slow cooker with
non-stick cooking spray. Put the peaches and blackberries in the
bottom of the slow cooker.
- 2Add in the sugar, flour, lemon juice and almond extract. Toss gently to combine. Let sit for 30 minutes.
- 3In
a large bowl, combine the flour, baking powder, baking soda, salt, 3
teaspoons of the sugar and the cinnamon. Using a pastry cutter or a
fork, cut in the butter until the mixture resembles coarse crumbs. Add
in the buttermilk and stir just until combined.
- 4Drop
the crust mixture on top of the fruit mixture in tablespoon-sized
balls. Sprinkle the top with the remaining 2 teaspoons of sugar.
- 5Cover and cook on high for 2 hours, or until a toothpick inserted in the middle of the topping comes out clean. Serve warm.
