Slow Cooker Peach & Blackberry Cobbler

 

Slow Cooker Peach & Blackberry Cobbler

Ingredients

  • 1 pound peaches, sliced
  • 6 ounces fresh blackberries
  • 5 tablespoons sugar
  • 1 tablespoon flour
  • 1 1/2 teaspoons lemon juice
  • 1 teaspoon almond extract
  • 3/4 cup flour
  • 3/4 teaspon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 5 teaspoons sugar, divided
  • 1 teaspoon cinnamon
  • 2 tablespoons butter
  • 1/2 cup buttermilk

 

Directions

  1. 1Spray the inside of a 3-quart slow cooker with non-stick cooking spray. Put the peaches and blackberries in the bottom of the slow cooker.
  2. 2Add in the sugar, flour, lemon juice and almond extract. Toss gently to combine. Let sit for 30 minutes.
  3. 3In a large bowl, combine the flour, baking powder, baking soda, salt, 3 teaspoons of the sugar and the cinnamon. Using a pastry cutter or a fork, cut in the butter until the mixture resembles coarse crumbs. Add in the buttermilk and stir just until combined.
  4. 4Drop the crust mixture on top of the fruit mixture in tablespoon-sized balls. Sprinkle the top with the remaining 2 teaspoons of sugar.
  5. 5Cover and cook on high for 2 hours, or until a toothpick inserted in the middle of the topping comes out clean. Serve warm.
